Multi-grain holiday sausage stuffing
2 cups chicken broth
2-3oz bags Minute multi-grain medley
1/2 lb breakfast sausage
3 stalks celery chopped
1 small yellow onion diced
1 cup fresh cranberries halved (or 1/2 cup dried cranberries)
1 cup diced apple
1/2 cup light brown sugar
1/2 Tbsp dried sage
1/2 Tbsp poultry seasoning
1/2 tsp crushed red pepper flakes
Combine broth and Minute Multi-grain medley in a medium sauce pan and stir. Bring to boil then reduce heat to simmer. Cover and let cook for 10 minutes or until broth is absorbed.
While the Multi-grain is cooking place the sausage into a large frying pan and sauté over medium high heat for 5 minutes (stir often). Add celery, onions and cranberries to the pan. Continue cooking an additional 5 minutes or until meat is browned and onions are translucent. Add apple, sugar, sage, poultry seasoning and pepper flakes. Stir. Reduce heat to low and cover. Allow to cook an additional 2 minutes.
Combine the cooked Minute-multi-grain with the sausage mixture.
Serve while hot.
* sausage mixture can be made day before and heated up just prior to mixing with the minute Multi-grain medley
